Ukiah Japanese Smokehouse in Asheville announces new details; reservations soon available

ASHEVILLE – Ukiah Japanese Smokehouse has released new details about its forthcoming opening at 121 Biltmore Ave.

The concept, from Asheville partners Derek Allen and Kevin Wojtowicz and restaurateur Michael Sponaugle, will open later this month. Kitchen talent will include award-winning chef Michael Lewis, Steven Haigh and Lizzy Maynes.

The management team plans to open reservations June 28 via Open Table or 828-470-7480.

The Japanese Smokehouse concept will merge Asian ingredients and flavors with American barbecue techniques. Helping in that endeavor will be a 14-foot, 500-gallon custom smoker by Primitive Pits and a large wood-fired grill from which will issue dishes like Wagyu skewers with wasabi and yuzu kosho and baby back ribs with yakiniku sauce.
